All throughout my healing process, I made sure to soak up & deeply appreciate every moment that I felt good or at least better in.⠀

I began to cherish every relationship I have & appreciate people for their strengths & even their quirks.⠀

I learned who my true friends (& family) are.⠀

I now put less pressure on myself, & I make joy a priority. I no longer put off pleasure until “later”. I soak up every ounce of enjoyment that I can in this life. But I also see pleasure differently than most, because pleasure is often associated with food & mistaken for addiction. I learned that unhealthy foods actually do not bring me true pleasure, only temporary satisfaction & emotional suppression. It was an addictive cycle, & I realized that I actually feel my best & most capable of living life to the fullest when I am fueling myself on healing foods. My healing lifestyle brings me infinitely more joy & pleasure than unhealthy foods & lifestyle choices ever did.⠀
⠀
I now see the world through big picture lenses, rather than just through my own personal vision. I am tuned into the big problems of the world, & I am consciously aware of how I can contribute to the solutions. ⠀

I don’t hold back in expressing how I feel anymore. I use my voice. I speak up for what I believe in. I am confident in myself in every way. I love my body. & I learned how to love my body while it was breaking down on me, so that love carries through no matter what happens & no matter what my outer shell looks like. I have a whole new appreciation for the human body, what makes it tick, & all that it does for us. I love what makes me unique. I love what makes everyone else unique. I see & deeply appreciate the beauty in imperfections. ⠀

foodasmedicine It's been awhile since I've posted and to be honest I've just gotten so caught up in what I think I should be doing, or creating, or posting that I just got too scared to post anything at all. But I have been reminded why I started this little blog of mine to begin with and that's because I love food and believe in the power of it to completely transform how you feel and your health.

But I have realised that not being able to post every other day doesn't make that any less true. The truth is, like everyone, life gets in the way. So I thought it important to share a couple things about me and this blog.

1) all the photos you see here I take. This photo is a photo of my shop from my local fruit store and is the basis of what I plan to cook this week. The table it's on is my actual coffee table and the plates, knives, etc are just what we use in my house to eat with. The vegetables aren't organic, they aren't from a farmer's market, and as much as I love those things my day to day reality doesn't always make that possible. But do I think this produce looks any less amazing or nutritious? Definitely not, and I'm really passionate about showing you how.

2) I do my weekly shop on a Sunday because I work full-time. This is the day when I get the chance to take my time walking through a shop and is my favourite part of the week. Sometimes I am swayed by beautiful seasonal fruit and veggies that are an amazing price because unlike sale jeans, they always make you feel good. 
3) I cook on the weekend and that's when a lot of the photos of food that I share are taken. On the days I'm in the office it takes me two hours to get to work, so in the dead of winter there is no daylight when I come home. If you follow me, I'm actually going to start sharing that via my stories - I can't promise it will be insta worthy but I hope it'll give you some insight into how you can make food your medicine. How would I know? I'm studying nutritional medicine so on top of the full-time job I'm juggling study and assignments.

If nothing else, I hope you can take something away from my blog because I'm not just doing it for the gram, I really want to help and share the power of food 👍🍋

foodasmedicine Midnight Sky: It was a bit warm today, and I was dreaming of a cool midnight sky. I decided to create some!  One cup of organic blueberries, 1 teaspoon Chia seeds, 1/4 cup cooked meal, 3/4 cup almond milk, half banana and 1/2 tsp honey 🍯. Mix it in a blender for 10 to 15 seconds and voila!  If you want it more blue than gray, then skip the oatmeal.

You'll need 1 cup each of sunflower seeds, shredded coconut and medjool dates, 3 heaped tablespoons raw cacao & a big pinch of sea salt.

In you blender, start with the sunflower seeds and blitz until they are fine, then add coconut, cacao & salt.  Keep blending and add the dates, a few at a time, until a fudgy ball forms in the blender. Press into a tray lined with baking paper, set in the fridge then slice. You can make an enormous batch of these and store them in the freezer.

Why not also try different essential oil flavours like rosemary, wild orange, peppermint or cinnamon? Sound yum?

Though quickly had to go back home as there were too many mosquitos flying and I started to feel like I am going to break out. Just 1 year ago, going outside the home would be impossible & unimaginable for me. Dealing with TSW,  my threshold for being outside the house at that time was maximum 2 hours before I break out into an unbearable itch. And would have to go home, shower, moisturize and take deep breaths in bed to calm down my system. My internal system was so reactive + I had barely any skin barrier, that environmental allergens & triggers could get into my system some how. Hence other than medical & healing care appointments, I would be bed ridden at home resting & researching recipes. I truly believe and still believe that food  can help heal eczema.  Many factors play a role in healing, and the food we ingest is one big factor.

foodasmedicine Soup. Even in summer is satisfies beautifully. Here, I sautéed chopped yellow onion in olive oil, added zucchini, a spice mix that brought me right back to Nice, France where I purchased it. It has a blend of herbs and a touch of curry spice. (The point here is: see what’s in your cupboard and what flavors you like or what you’ve been keeping for that special event. Spices and herbs are meant to be used. They don’t age well like amazing wine) the first photo is the stage you see here. I then added diced potato and broth...homemade vegetable broth that I have in my freezer. Soup. Even in summer is satisfies beautifully. Here, I sautéed chopped yellow onion in olive oil, added zucchini, a spice mix that brought me right back to Nice, France where I purchased it. It has a blend of herbs and a touch of curry spice. (The point here is: see what’s in your cupboard and what flavors you like or what you’ve been keeping for that special event. Spices and herbs are meant to be used. They don’t age well like amazing wine) the first photo is the stage you see here. SUMMER is for SALAD. But what makes a "good" salad? In Chinese medicine, the "benefits" of foods are described in terms of their colors, flavors, and whether they are warming/cooling/neutral in temperature. Cold foods - straight from the fridge raw veggies - can challenge digestion, and are generally avoided even on hot days unless balanced with something warming. When I make a salad, I try to include as many colors and textures as possible with a mix of raw and cooked veggies. This main-dish salad is going to a pot-luck this evening. It has quinoa, barley, and toasted orzo, cooked peas, scallions, cucumbers, baby bell peppers, carrots, cherry tomatoes, olives, parsley, basil, oregano, toasted almonds and pine nuts, and is dressed with olive oil, fresh squeezed lemon juice, sea salt and black pepper. Its crunchy and creamy, contains all five flavors (spicy, bitter, salty, bland, and sweet), and all 5 colors (red, green, orange/yellow, black, white). Nothing in it will spoil and make people sick if it sits on a table all evening. From a western perspective, it has a nice balance of protein (quinoa, nuts), complex carbs( barley, veggies), and fat (olive oil, olives, nuts) with a truck load of micronutrients. Even better...its DELICIOUS!
